Buttered Egg Noodles

Ingredients:

16oz package of egg noodles (broad)

8 tbsp butter (1 stick – divide in half)

4 cups chicken broth

Garlic powder

Salt

Pepper

 

Instructions:

In a pot, or high sided pan with lid, bring chicken broth and 4 tbsp of butter to a boil.

Once boiling, add egg noodles, submerging as much as possible. Cover with lid and turn heat to medium low so it simmers. Set timer to 8 minutes. At about halfway (4 minutes), stir noodles.

Liquid should be mostly soaked up by the noodles and the noodles should be tender. If there’s still a lot of liquid, keep simmering for a bit, watch carefully so you don’t boil your noodles dry.

When finished, add the remaining 4 tbsp butter, stir well coating all the noodles.

Season lightly with garlic powder, salt, and pepper to taste.

(As a variation, you could add herbs such as thyme, dill, parsley, a bit of parmesan cheese etc )

Sweet ‘N Sour Country Style Boneless Ribs

INGREDIENTS

1/3 cup flour
1 teaspoon salt
1/4 teaspoon pepper
2 1/2 lbs boneless country style ribs
1/4 cup butter
1 medium onion-chopped
1 cup water
2 tablespoons beef bouillon base
3/4 cup red wine vinegar
3/4 cup brown sugar
1 teaspoon red pepper flakes
2 tablespoons ketchup
2 tablespoons A-1 Steak Sauce
2 tablespoons minced garlic
1 teaspoon chili powder

INSTRUCTIONS

Measure flour, salt and pepper in a sealable plastic bag
Cut ribs into 2-inch sections.
Add ribs and shake to coat.
Brown ribs in butter in a large skillet-remove and place in the slow cooker or crock pot.
In the same skillet, combine all the remaining ingredients.
Bring the mixture to a boil.
Pour over ribs.
Cover and cook on low for 8-10 hours. Or until the beef ribs are tender.
Best served over rice and/or stir-fried vegetables (would work well with mashed potatoes or grits).

Mississippi Pot Roast is one of my favorite go-to meals. Throw all the ingredients into the slow cooker in the morning and by evening, add some veggies and perhaps some rice or potatoes, you have a delicious meal almost everyone loves. This is home cooked comfort food at its greatest!
